Shahi paneer or shahi paneer recipe – In this article you will learn to make restaurant style super delicious, creamy & rich shahi paneer. In Indian restaurants Shahi paneer is popular & it is made in several ways. In the royal kitchens by mughals shahi dishes originated and were meat based. The thigh mentioned by many sources is that the mughlai foods were made rich with the use of saffron, nuts & curd. Tomatoes were not used by the mughal as they didn’t exist in India during their reign.  

There are many good quality restaurants in India who provide shahi paneer and every restaurant has their own touch on that. Restaurant serves shahi paneer made in different styles, some use tomatoes also. The recipe shared by us in this article also uses tomatoes but if you don’t like you can exclude tomatoes.

Addition of extra cream can balance the tanginess of the gravy which is arrived using both tomatoes & yogurt.

Most of the restaurants in India serving mughlai foods use kewra water for the scent, To make shahi paneer recipe. The dish feel not so special without that.

However, the kewra water is just for bringing the aroma to mughalai foods as kewra water doesn’t add any taste to the food. But you can skip this if you don’t like the scent.

How to make Shahi Paneer

Preparation for shahi paneer recipe

  1. Add 4-5 tablespoon of ghee. This recipe is for 4-5 servings of Shahi paneer. Let it heat.

2. Add 4 chopped medium-sized red or white onions. Let the onion become a little golden.

3. After 2 mins add peeled black and green cardamoms and mix it in with the onions. And Cover it for 3-4 mins.

4. Remove the lid from the frying pan and give it all a toss. And then cook the onion for a while without the lid on.

5. Once the onions are golden on all sides, add 5 medium-sized chopped tomatoes.

6. After that add the following-

(i) red chilli powder

(ii) zeera(cumin) powder

(iii) dhaniya(coriander) powder

(iv) salt(according to taste)

7. Mix the spices. Then cover the pan with a lid and let it cook on a low flame for 5-7 mins.

8. Remove the lid. The tomatoes and onions are just about cooked. Let it cook for another 4-5 mins with a lid on.

9. Turn the flame off, cool the mix a little and add the mix to a blender and blend the mix to a fine paste.

How to make Shahi Paneer

10. In another pot, add some ghee and add the paste in it. Then cover the pot and let it cook on slow flame for 4-5 mins.

11. Remove the lid and add 4 tablespoon of tomato puree and mix it all. Then cover the mix and let it cook for another 5 mins.

12. Now add 400grams of rectangular shaped cutted paneer.

13. Remove the lid and add half a cup of fresh cream. Then cover the mix and let it cook for another 5 mins on a slow flame.

14. 5 mins later, remove the lid, give it a stir and your Shahi Paneer is now ready to serve.

What is Shahi Paneer?

The meaning of shahi means royal and if we look at this complete name “shahi paneer” we can say this is a royal paneer dish, as the name also suggests this. All the rich ingredients are added to this food such as Dry fruits, saffron, yogurt, whole spice and sometimes cream to make this dish royal and rich.

The Shahi paneer or we can say royal paneer gravy is based on onion, tomatoes, nuts. So this is very rich by adding the dry fruits and yogurt.

This royal dish is best to make for special occasions or fastival time. As the result is aromatic, creamy, semi sweet gravy with soft paneer cubes that your family are going to love.

This dish is can be served with many things such as naan or tawa roti or rumali roti or paratha or tandoori roti. You can also serve it with rice-based dish like cumin rice or veg pulao or ghee rice.

Creamy Rich Royal Paneer

The rich gravy of shahi paneer recipe gets its richness from cream and nuts. I also add some yogurt for that extra flavor.

To make the gravy extra rich some people add khoya (dried milk solids). I didn’t add them as I thought it was already very rich with nuts and cream!

For this recipe, first I boil the onion with nuts, galic, ginger and then puree to form a paste.

Then with everything else the paste is cooked. It’s pretty simple actually.

I added some flavour to this gravy using few spices like coriander powder, chili powder, black pepper, cardamom powder and very little garam masala.

If you want to give a yellowish texture to the gravy then you can add turmeric (add very little around 1/4 teaspoon).

Here are a few tips to make a good restaurant style Shahi Paneer recipe!

✓ If possible use sweet white onion for this recipe. It works best here. As red onion contains stronger flavour and in this recipe we only want mellowed onion flavour for which white onion works best.

✓To make this recipe don’t add lots of spies. I prefer using very few spices to make this recipe.

✓For that rich aroma and flavor add a pinch of saffron strands.

✓ don’t forget to sprinkle cardamom powder before serving!

I cut the paneer pieces into boxed shapes for this recipe. This recipe is made by me several times and I always just cut the paneer into boxed cubes.

Tips & Substitutes

Rich version: The shahi paneer recipe is made with ghee or butter and cream to make a rich version of this. In this recipe, you can add what i added in the  recipe card and with the help of that you can choose what will suit you to add in the shahi paneer. Feel free to use cream or butter if you prefer.

Tomatoes: Most people don’t add tomatoes to this recipe since they use yogurt(curd). But you can substitute yogurt with tomato puree in the same proportions as mentioned in the recipe and still make a delicious shahi paneer recipe. If adding tomatoes, then do add cream as both tomatoes and cream really go well with each other.

Notes

  1. If you are looking for a creamy tomato based gravy for Shahi Paneer, try this Paneer Butter Masala recipe.
  2. Vegans can make the same recipe with tofu and cashew yogurt. I won’t advise using soy or peanut yogurt for this dish as these will ruin the taste. If using cashew yogurt then you don’t need to add cashews while making the paste.
